Summer Rains and Summer Shrooms

July continued to provide rainy days and evenings, so the mushrooms continued to show off! We wild harvested so many delightful edibles and encountered such an array of fungal diversity! We also continued to educate myco-curious people and planned for some larger upcoming events.

The mycophiles on the Collar City Mushrooms team are not just pan hunters! The beauty and uniqueness of every mushroom body is so wonderful to encounter! Here are a few of our favorites from July!

Foraged Finds and Fabrications

July was an incredibly bountiful month for wild crafting!  The Flora and Fungi of the Capital Region were certainly showing up in style!

We harvested some Immature Juglans (Black Walnuts) in order to make some delicious Black Walnut syrup.

Wild berries are in season! They are always such a delight to grab while walking a trail.

Black Raspberries (Rubus occidentalis)

Elderberries (Sambucus canadensis)

Our favorite wild edible experience was certainly the dinner we made after an incredible wild harvest. We sauteed up a variety of wild mushrooms we just pulled out of the forest (chanterelles, saffron milkies, chestnut boletes, lilac boletes, and black trumpets) and made a mushroom gravy. Then sauteed the Frost’s Boletes separately in just some light oil. Served atop some delicious spaetzle and alongside steamed Kale and a vegan “chik’n” patty. Wow! The richness of the mixed mushrooms medley, and surprising citrus of the Frost’s was so delightful!

Frost’s Bolete (Exsudoporus frostii)

Amy holds up one of the prized Frostiis

Saffron Milky (Lactarius deliciosus)

Chestnut Bolete (Gyroporus castaneus)

After Sauteing the mushrooms, garlic scapes, and onions, we added a packet of our mushroom gravy mix and a splash of water.

Delicious!!

Immature red oak acorns (Acer rubrum)

Acorns are starting to come in! We’re planning an acorn processing workshop with Mark and Sage from the Giving Trees. It will be October 1st and 2nd. Day one will include harvesting acorns, and day two will be about processing them and tasting some delicious treats made from last year’s bounty. Stay tuned for details.
